The first point is to pay attention to the original habit of coffee beans. Coffee beans cannot be exposed to strong sunlight, and they cannot be placed together with volatile things. These two points indicate that coffee beans are best sealed in the dark. Light inside the box or jar as well.


The second point is to distinguish the beans you need according to the color of the coffee beans. Whether it is a friend who has been in the coffee circle for a long time, these basic knowledge still need to be thoroughly cooked, and the coffee beans will appear differently due to different roasting degrees.


The color of the coffee itself will also change the flavor of the coffee itself. The light-colored coffee beans have a strong sour taste, but with the deepening of the roasting degree, the sour taste of the coffee beans will gradually disappear, and the bitter taste will disappear.


It will rise in steps. Basically, we divide the roasting degree of coffee beans into light roasting, medium roasting, and deep roasting. These three main categories can be subdivided into eight subcategories. It comes out of the following eight levels, from shallow to deep, they are light baking, meat program baking, medium baking, deep baking, urban baking, full-fledged baking, French baking, Italian baking, and Italian baking. The degree of roasting is the deepest.


The third point, pay attention to the proportion of defective beans, the less the better. Coffee itself is a commodity, and the entire industry chain is counted in sacks before it reaches the roaster. Occasionally, there will be vacuum packaging, but no matter how it is packaged, there will be a certain percentage of defective beans. Defective beans are manually removed during the first half of roasting, but this removal process also has different standards.


Half of the commercial beans have a defect rate of 30% to 40%, so the price is relatively cheap. The instant beans on the market are basically this kind of beans. General boutique beans are also between 10% and 15%. And the beans we usually sell, especially the high-quality beans, you will find that there are fewer defects, which are all manually screened!


Finally, choose the right roast level. The coffee beans are roasted from shallow to deep, and the flavor also changes from an obvious floral and fruity aroma to a mellow, carbonized, and even bitter taste. This can be selected according to your own taste, some people like the direction and elegant, and some people like the mellow and strong.
