Pancakes are mostly quick-rise bread, while some use yeast-raised or fermented batter. Most pancakes are cooked on one side of a griddle, then flipped to allow the other side to heat up.


Pancakes are served at any time of the year, depending on national and regional customs, and come in a variety of flavors, often with toppings and fillings such as cream, jam, fruit, and syrup.

Vegetable and egg pancake


Ingredients


1 egg


Plain flour 60g


1 handful of spinach


Salt 3g


Warm water


Step 1


Prepare a beaten egg and chopped spinach (vegetable)

Mix the flour with warm water and salt to make a thin batter (it needs to be thinner to make it easier to spread).

Pour the batter onto a baking tray (greased) and bake at 200°C for 5 minutes, until the batter is firm.

Remove the batter from the oven, pour in the egg mixture, and bake for 2 minutes.

Remove from oven and allow to cool, then slice and serve (you can serve with bean sauce)


Creamy Pancake


Ingredients


Fine sugar 20g


Flour 2 bowls


2 eggs


Peanut oil to taste


Milk 200ml


White sesame seeds in moderation

Add two eggs to two bowls of flour

Warm the milk and add the baking powder at a temperature of 35° or less, otherwise, the yeast will be damaged.

Knead the dough until it doubles in size, knead and deflate slightly

Grease a greased tray

Spread evenly on a baking tray and make small holes with a fork

Sprinkle with sesame seeds and sugar

Sweet potato and oat Pancake


Ingredients


Two eggs


Sweet potatoes Two


Black oats to taste

Slice the sweet potatoes and steam them

Stir-fry the oatmeal over low heat

Puree the sweet potatoes and add the eggs and mix well

Wheat flour 250g


Yeast 3g


Caster sugar 1 tsp


Milk 100ml


Butter 50g


2 eggs


Feta cheese 150g


Mozzarella 150g

1 tsp sugar, 1 tsp yeast, 100ml warm milk, mix well


Step 2


250g flour, 50g melted butter, and 1 egg pour into the mixture in the first step

Mix the dough

Cover with cling film and leave to rise in a warm place for 2 hours

Divide the dough in half

Roll out one piece of dough

Prepare the feta and mozzarella cheeses and mix well

Spread the cheese on the pastry

Wrap the cheese in the pastry

Re-roll the dough

Scallion Pancakes


Ingredients


Flour 180g


Boiling water 120ML


A little salt


An appropriate amount of chopped green onion (just the green part)


Adequate amount of cooking oil

Knead the flour, boiling water, and a pinch of salt in a large bowl to form a smooth dough, cover with a damp cloth and leave to rise for a quarter of an hour.


Step 2


Divide the dough into equal portions and roll it out into a circle.

Lightly grease the rounds and sprinkle them with salt and spring onion.


Step 4


Roll out the dough into strips and pinch tightly.

Form into a round patty, again pinching at the ends.

Roll out again into a circle.

Fry in a pan with a little oil over low heat and brown on both sides, then cut and serve.
